You keep Friday intact with bachelor party catering in Miami — a chef at the house, trays dropped, or a restaurant we already booked. Feeding twelve the first night is how Saturday still has a boat in it.
Chef versus drop-off versus a reservation. A chef needs a real kitchen — stove, counters, trash, a door that isn’t a galley in a Brickell junior one-bed. They cook on site, you sit. Catering delivery is trays and chafers when the kitchen can’t take a chef. A restaurant is one name, fourteen seats, card on file, two weeks out. You pick based on the house, not based on a photo of a tasting menu. Tasting menus for fourteen are a hostage situation. Steak scales.
Friday night at the house. Flights hit mid-afternoon. Nobody wants to miss a slip tomorrow because they wandered Lincoln for two hours. A chef or a drop at 8 keeps the list in one place, the money in one pot, and the 11 p.m. bedtime possible. You can still go out after. You ate first.

Breakfast the morning after. The charter doesn’t wait on a diner that seats two. Coffee, eggs, water, something that travels to Haulover. A chef can leave breakfast in the fridge. Catering can drop it at 8 a.m. if the building allows morning vendors. Hotel breakfast for fourteen without a reservation is a buffet argument. Plan it.
Boat day food. A lot of hulls don’t feed you. Coolers: ask what’s allowed at the lot. Sandwiches, fruit, water, more water. Miami heat plus a 1 p.m. sandbar is how people are done at 4. Glass on some boats is a no. We ask. You don’t want a dock lecture with twelve guys and a bag of bottles.
Dietary notes and headcount timing. Vegetarian, no fish, no drinking — on the first text, not when pans are hot. Headcount is who is eating, not the original sixteen. Recalculate when two people drop. Chefs and kitchens want a number that holds. Call for a quote on your dates and group size. Menus and weekends move. I won’t post a per-head rate that dies on contact with Art Basel Saturday.
Building rules: some condos want a certificate for extra vendors. Some Beach listings allow a cook and still ban parties. We ask the desk before we book the chef. Don’t surprise security with knives at 4 p.m.
This sits on the house. House rentals with a kitchen make the chef possible. Bachelor party packages put food on the same sequence as the boat so Friday isn’t a scavenger hunt. Dates, headcount, kitchen or no kitchen: (786) 244-3811.
